Dat de mayonaise pakt, hebben we te danken aan emulgatoren, stoffen die helpen bij het mengen van twee stoffen die normaal gesproken niet of moeilijk mengbaar zijn. Je vindt deze handige E-nummers in heel wat voedingsproducten terug.

Maar Lisa Miclotte (Universiteit Gent) heeft gemengde gevoelens bij emulgatoren, want ze zijn mogelijk schadelijk voor onze gezondheid. Daarom wil Lisa meer weten over hun op onze darmflora.
